If I set my forums to be read only by registered users, will google spider them, or not?

It will try to crawl the links to your forums and posts, but will only get:
"you are trying to access a restricetd area."
"go back"

No.
All you can do is everyone can read the forums (so robots can spider) but only registered users can post.
Just like this site.

i would allow ready by all for your forum, i would also create a sitemap or backend feed also for every category

and submit to google sitemaps so you can send for bots when you want them

The better option is to let Google know! use robots.txt
