I see multiple versions at the bottom of my Forums.. one says 2.0.7 and another says 2.1 Chatserv.... how can figure out which BBtoNuke I have so I can upgrade? I'm using 7.6, which version can I upgrade to?

phpNuke 7.6 has BBToNuke 2.0.10
The correct version is the line "Powered by phpBB 2.0.x" in your forums footer or forums admin page footer
what version of BBtoNuke does 2.8 Chatserv patch carry? My forum admin page says phpBB 2.0.10 and under that it says BBtoNuke 2.0.7 but the 2.8 patch I installed says it should be 2.0.11. Which forum update should I start with and finish with (knowing that I will be upgrading to 7.6 version 3.1)?

I'm not sure exactly.. I believe 2.0.11 files should be installed.
It is possible that you did not run the upgrade script when installed, thus your version number in your database is off.
Best to upgrade to the latest Patched 3.1, it has the latest BBToNuke 2.0.17. There are known security flaws with phpBB less than 2.0.17
